Today’s Brekkie: Lamb Shanks & Potato and Carrot Mousse
Today I felt like something substantial and I had a bit of time up my sleeve. So first I pre-heated the oven to 220℃
Then I peeled 3 large Dutch Cream potatoes and 20 medium size Dutch carrots. Cut them all up into similar size chunks and boiled in salted water until soft. Drain the water, mash by hand with cream until you have a thick paste. Set aside. Pour a litre of clarified lamb stock into an ovenproof dish, add a couple of lamb shanks, salt and pepper, add two slices of lemon and a twig of rosemary and bake, without turning or basting, for 1 hour. Remove, plate carrot/potato mousse, (check seasoning) add a lamb shank and some jus from the roasting pan.

I am trying to run a business that relies on Internet connection and the NBN has been down for over 2 weeks by now
The sim card in the modem (supposed to connect to air when landlines are down) is mostly not working or working at about 20% capacity. I put an official complaint in (SR 1-2371283097062) and so far there has been simply no answer at all, despite the fact that Telstra acknowledged my complaint and told me they would answer within 5 business days. No work… no plan… no schedule. Now I don’t just pay $50 a month, but $380+ and I deserve an explanation, a guidance as to when the service will be reinstated and a credit to my account for having to hot-spot (which does not work well either as Telstra’s mobile towers can’t cope). Is this really the sort of customer service you want to be known for? Is this how a corporation that has Australian business by the balls is meant to operate? I think the least your company could do is communicate… you are in the communication’s business, right? This is dreadful PR. I regret having had to switch from a reliable ADSL service to the NBN

Today’s Brekkie: Chicken in Adobo Sauce with Pineapple Salsa
Love chicken, slowly simmered in Adobo sauce. Basically you just sear the chook (I never use breast, just thigh meat), add the Adobo paste, cover and simmer until chicken is cooked and sauce comes together. Check seasoning and serve with a salsa of finely cut red onions, pineapple, cucumber, green onions and chives.
Here’s the recipe for the Adobo Sauce:

10 dried Ancho chillies
5 dried Guajillo chillies
8 garlic cloves, peeled
½ teaspoon cumin seeds
½ teaspoon oregano
Freshly cracked black pepper and salt to taste
¼ cup vinegar
¼ cup chicken stock
A little water
Pinch of white castor sugar
Wipe chillies with a damp cloth, cut off stems and get rid of the seeds.
Put chillies into a bowl and cover with hot water. Leave them to soak for ½ hour.
Pour off water and put chillies with all other ingredients into a blender. Blend on high speed, then add a little water, if necessary, to obtain a thick paste. Use immediately or vac-pack and put into the freezer for later use.

Today’s Brekkie: Chicken Rice
I felt like a simple dish of ‘chicken rice’ this morning. This dish has cult status in Malaysia where people will travel for long distances to eat their favourite version. Every family has their own recipe and every mother makes the best one. I start by making a ‘perfectly steeped chicken’. Bring salted water to the boil. Spread the entrance to the chicken with skewers (so the hot water can rush in) and lower the chicken into the boiling water, raise, lower, raise, lower and immerse. Bring water back to the boil, switch off heat, cover saucepan with the lid and set aside for exactly 1 hour. Remove chicken and take off meat. Wile the chicken cools to room temperature, boil the rice in the stock left over from the chicken. Plate rice and chicken pieces and top with deep-fried shallots.
